Pineapple Upside-Down Cake

Ingredients

  • 1 (20 oz) Can Sliced Pineapple in Juice
  • 2 (4 serving) Packages Vanilla Pudding
  • 10 Maraschino Cherry Halves
  • 1/2 Cup Brown Sugar, Firmly Packed
  • 1 Package Yellow Cake Mix
  • 4 Eggs
  • 1 Cup Water
  • 1/4 Cup OIl

Directions

  • Preheat oven to 350 degrees
  • Drain the pineapple, reserving the juice
  • Arrange slices in a 9 x 13 pan
  • Place cherry hales in the center of each
  • Combine 1 package of pudding mix and pineapple juice, and pour over the pineapple and sprinkle with brown sugar
  • Combine cake mix, 1 package pudding mix, eggs, water, and oil in a large mixing bowl.
  • Blend at medium speed for 4 minutes and pour into the pan
  • Bake for 55 to 60 minutes
  • Cool in the pan for 5 minutes
  • Invert onto a platter and let stand for 1 minute, then remove the pan
