Ingredients
- 2 Egg Whites
- 2/3 Cup Unsweetened Cocoa Powder
- 2 Tablespoons Cornstarch
- 2-1/4 Cups Skim Milk, divided
- 1/2 Cup Granulated Sugar
- 1/8 teaspoon Salt
- 1 teaspoon Vanilla Extract
Directions
- In a small bowl, lightly beat egg whites and set aside
- In a large bowl, combine cocoa and cornstarch
- Whisk 3/4 cup of milk into the cocoa mixture until completely smooth
- In a large, heavy saucepan, combine the remaining milk, sugar, and salt; mix well
- Bring to a boil over high heat, whisking constantly; remove the pan from the heat
- Gradually whisk 1 cup of hot cocoa mixture into the egg whites
- Pour the mixture back into the pan and cook over medium-low heat for 2 minutes, whisking constantly
- Add vanilla; blend well and pour into serving dishes.
- Cool for 1 hour before serving
