Chocolate Pudding

Ingredients

  • 2 Egg Whites
  • 2/3 Cup Unsweetened Cocoa Powder
  • 2 Tablespoons Cornstarch
  • 2-1/4 Cups Skim Milk, divided
  • 1/2 Cup Granulated Sugar
  • 1/8 teaspoon Salt
  • 1 teaspoon Vanilla Extract

Directions

  • In a small bowl, lightly beat egg whites and set aside
  • In a large bowl, combine cocoa and cornstarch
  • Whisk 3/4 cup of milk into the cocoa mixture until completely smooth 
  • In a large, heavy saucepan, combine the remaining milk, sugar, and salt; mix well
  • Bring to a boil over high heat, whisking constantly; remove the pan from the heat
  • Gradually whisk 1 cup of hot cocoa mixture into the egg whites
  • Pour the mixture back into the pan and cook over medium-low heat for 2 minutes, whisking constantly
  • Add vanilla; blend well and pour into serving dishes.
  • Cool for 1 hour before serving
