Chocolate Mint Snow-Top Cookies

Ingredients

  • 1-1/2 Cups Flour
  • 1-1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1-1/2 Cups (10 oz) Mint Chocolate Morsels
  • 6 Tbs Butter or Margarine, softened
  • 1 Cup Sugar
  • 1-1/2 teaspoon Vanilla
  •  2 Eggs
  • 2/3 Cup Powdered Sugar

Directions

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine flour, baking powder, and salt. 
  • In a saucepan, over low heat, melt 1 cup morsels
  • In a large bowl, cream butter and sugar
  • Beat in melted morsels and vanilla; beat in eggs
  • Gradually beat in dry ingredients and stir in remaining morsels
  • Wrap in plastic wrap, freeze for 30 minutes or until firm
  • Shape dough into 1-inch balls, roll in powdered sugar
  • Place on an ungreased baking sheet and bake for 10 to 12 minutes
  • Let stand for 2 minutes and move to the cooling racks
